Sweet Avalakki Pongal

Sweet Avalakki Pongal, also known as Sihi Huggi or Avalakki Sakkarai Pongal, is a traditional South Indian dish made primarily from flattened rice (aval or poha), jaggery, and moong dal. This dish is not only popular during the Pongal festival but is also offered as prasad during various Hindu festivals like Ganesh Chaturthi and Navaratri.

Contents

  • Flattened Rice (Avalakki/Poha): The main ingredient, usually medium or thick poha is preferred for this dish.
  • Jaggery: Provides the sweetness and gives the dish its distinctive flavor.
  • Ghee: Adds richness, enhances flavor, and gives a glossy finish to the dish.
  • Cardamom Powder: Adds a fragrant aroma and flavor to the Pongal.
  • Cashews and Raisins: Add texture and a rich, nutty flavor.
  • Grated Coconut: Adds to the richness and texture.
  • Water or Milk: Used to cook the poha and dissolve the jaggery.
  • Salt: A pinch to balance the sweetness.

Preparations

  •     Soaking the Flattened Rice: The flattened rice is rinsed and soaked briefly in water, then drained. It should be soft but not mushy.
  •     Preparing Jaggery Syrup: Jaggery is dissolved in a small amount of water or milk, and the mixture is heated until it forms a smooth syrup.
  •     Cooking: The soaked poha is added to the jaggery syrup and cooked until it absorbs the sweetness. Ghee, grated coconut, and cardamom powder are then added and mixed well.
  •     Tempering: Cashews and raisins are fried in ghee until golden and added to the Pongal.
  •     Serving: Sweet Avalakki Pongal is typically served warm, often garnished with extra ghee or coconut.
